At Waves Coffee Bar & Patisserie, our kitchen is where the magic really begins. From the very start, we’ve believed that the best things take time, care, and a little bit of flour on your jumper. We do our best to make as much as possible in-house, baking fresh each week and taking pride in creating from scratch wherever we can.
Our baking team is led by Abbe, the owner of Waves, alongside Niamh, our Patisserie Sous. After spending over a decade in hospitality and speciality coffee, Abbe studied Patisserie at Sunderland College before beginning a small baking journey supplying cakes to a local café. What started as a side passion quickly turned into a much bigger dream. Combining a love for speciality coffee with handcrafted patisserie, Waves was born.


Today, our kitchen is constantly evolving — from buttery pastries and filled croissants to seasonal bakes and signature treats inspired by coastal cafés, coffee culture, and the simple joy of sharing good food. Everything we create is made with the hope that it brings a little comfort, excitement, and sweetness to your day.
We’re huge believers that food should feel exciting, comforting, and a little nostalgic all at once. Whether it’s a classic pastry done properly, a loaded croissant special, or something completely new we’ve dreamed up for the counter that week, every bake is created with creativity and care at the centre of it.
Over the last few years, Sunderland has completely transformed when it comes to food and coffee culture. What was once a quieter food scene is now full of passionate independents, creative kitchens, speciality coffee spots, and exciting new places to eat and drink. There’s a real sense of community growing within hospitality here, with local businesses pushing each other forward and helping put Sunderland on the map as somewhere worth visiting for good food, good coffee, and genuinely welcoming spaces. As the city centre continues to grow and evolve, it’s exciting to be part of a new generation of independent businesses helping shape what Sunderland’s food scene looks like.
